Living
with the Vines
How the seasons set the rhythm in the lives of the winemakers.
Autumn
Harvest period for several weeks • Grape processing in the cellar • If necessary, skin fermentation and punching down the cap • Development of Botrytis cinerea • Nutrient storage in the harvested vines
Winter
Wine aging in the cellar • Racking the wines into barrels and tanks after fermentation • Ice wine harvest when the required sub-zero temperatures are reached (min. -7 °C) • First young wine • Pruning (January/February)
Spring
Maintenance and repair work • New planting and replanting • Cover cropping and composting • Desuckering and tucking in the shoots • Moderate leaf thinning as the vines bloom
Summer
Summer pruning of long shoots at the tips • Thinning for quality, grape splitting if necessary • Constant monitoring of the ripening process • Harvest preparations and start of harvest
